Alternative Nut Milk Recipes
Here is an alternative nut milk recipe that works great and tastes good too!
This can be used to replace milk in recipes that taste odd When made with commercial soy or rice milks. It can be used for custards and puddings, since soy milk sometimes takes on a nutty taste when used in these. It is good to drink, also. The fat content depends upon the type and quantity of nuts used. More nuts in proportion to water gives will give you a richer milk. This recipe is somewhere between whole milk and half-and-half in richness.
1 cup + approx. two tablespoons of almonds (blanched*) or raw cashews ------- use less for a less nuts for a thinner milk
(1/2 cup = skim milk?)
2 1/2 cups water
Put nuts and half a cup of the water in a blender. Blend well on high, the nuts should be pulverized. Add remaining water and blend approximately 2 minutes (more or less, depends on your blender.) When finished blending, just pour through the nutmilk bag and squeeze out. This makes approximately 2 cups. *blanching the almonds (dipping in hot water for 30 seconds then removing the brown skins) this results in a much prettier milk.

Cashew Milk

1/2 cup raw cashew pieces
1 tablespoon FruitSource, maple syrup, agave or
sweetener of choice (sweeten to taste)
2 cups water
1. Combine cashews with 1 cup water and sweetener in blender. Blend on high to form a thick cream.
2. Slowly add remaining water and blend on high for 2 minutes. Strain through nutmilk bag for a thick creamy milk. Use cashew milk as a cream in recipes instead of drinking straight, as it is very rich.
Yields approximately 2 cups.

Nut Milk Smoothie

2 cups of nut milk
2 small bananas
8 sweet, ripe strawberries
1/4 teaspoon of Celtic Sea salt
10 pitted dates OR
2 Tablespoons raw honey
Blend all the ingredients in a blender until smooth.
Tastes best cold - chill in the refrigerator, or use frozen bananas. You can use nutmilk with lots of different fruits to make delicious smoothies. Also try: blueberries, raspberries, pineapple, peaches or mango.
